Yummy Quinoa Pilaf

A quick and easy side or main dish to enjoy warm or cold.




Enjoy a quick and easy, sweet and savory dish.


Ingredients:

1 med-large sweet potato

1 c. quinoa (I use the Alter Eso pearl quinoa)

2 T. curry (or try other seasonings or herbs – e.g., cumin, ginger, garlic)

Coconut oil

Cilantro (fresh, chopped)

1 c. golden raisins (I sometimes add nuts/seeds like cashews)

Sea salt to taste (optional)


Directions:

Cook quinoa according to package (I use a rice cooker as it only takes a few minutes). While quinoa is cooking, dice sweet potato. Cook sweet potato over med heat in coconut oil w/ curry (or whatever seasoning you’re using), stirring constantly, a few minutes. Cover and lower heat on pan w/ sweet potato while quinoa continues to cook (I use a cast iron skillet). Once quinoa is ready toss quinoa, raisins, and chopped cilantro in pan w/ sweet potato. Serve warm as a side dish or main course. I also like it cold over salad greens. YUMMY!!!
